Pretty as a picture, this hot cross bun fudge is filled with cinnamon and raisins and decorated with a white chocolate cross. The perfect addition to your Easter holiday dessert boards.

I wanted to create an Easter themed sweet treat that was unique, fun and equally delicious. Everyone loves the warming flavours of hot cross buns, so I decided to pack it into a little bite size treat.

I like to serve this fudge at the end of an evening with coffees or on an Easter themed dessert table. It also looks gorgeous packaged in jars as gifts or as Easter decor on an entrance console table!

What's in this recipe?

Hot cross bun fudge

  • Brown sugar & condensed milk

    Gives the fudge its sweetness and delicious caramel flavour. The brown sugar also gives it the caramel colour reminiscent of traditional hot cross buns.

  • Butter & cream

    Full fat cream and butter gives the fudge a delicious creamy texture that allows you to bite through the fudge like butter. Please only use full fat cream here! I use salted butter in this recipe which gives the fudge a more balanced flavour.

  • Cinnamon & raisins

    Cinnamon adds a beautiful warm spice to the fudge that you’d find in a traditional hot cross bun. I like to roughly chop raisins so they disperse into the mixture more evenly and allow the top to be smoothed off. Currants can be used instead of raisins however I personally prefer the flavour of raisins!

  • Vanilla extract

    Vanilla extract just enhances the caramel notes in this recipe. Please use real vanilla extract here.

  • White chocolate

    White chocolate is melted and piped onto the fudge in a cross pattern to imitate traditional hot cross buns. Although traditional hot cross buns use a flour paste, this recipe is all about a sweet little indulgence!

Ingredients

Hot cross bun fudge
  • 1 can (395g) condensed milk
  • 450g brown sugar
  • 150ml thickened cream
  • 100g butter
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/3 cup raisins (roughly chopped)
  • 1/2 cup white chocolate (roughly chopped)

Instructions

Hot cross bun fudge
  1. Place the condensed milk, sugar & cream in a large saucepan. Stir over low heat until the butter has melted, and sugar has dissolved.
  2. Increase the heat and bring the mixture to a boil. Stir constantly with a spatula until the temperature reaches 118 degrees Celsius. Remove from the heat and set aside for 5 minutes.
  3. Pour mixture into the bowl of an electric mixer. Add vanilla and cinnamon and beat for 3-5 minutes until it starts to thicken - be patient here!
  4. Gently fold through raisins. Pour mixture into prepared pan and set aside in the fridge to set for at least 2 hours.
  5. Place chocolate in a small heatproof bowl. Melt in 30 second bursts in the microwave, stirring in between. Pour into a small ziploc bag. Cut a small hole in a corner of the bag. Drizzle chocolate over the set fudge in a grid pattern (pictures above). Place back in the fridge to set for 10 minutes. Cut into squares and enjoy!

Storing

Can be frozen for up to 3 months in an airtight container. Will keep for a week in an airtight container in the fridge. Holds its shape at room temperature.
