Sweet, refreshing & tangy! This is a super zesty and easy granita that looks stunning when served after a heavy meal. Flavoured with fresh limes, mint and prosecco, these little palate cleansers are served in pretty sugar and lime coated glasses.

This recipe is so easy to make and is always a crowd pleaser! I freeze the granita mixture for up to 3 months which makes it the perfect palate cleanser or dessert to make ahead.

I like to serve these before dessert however they are also a great light and refreshing summer dessert when noone can find space for cake! They are best enjoyed right away as they tend to melt quite fast due to the amount of prosecco used in the recipe.

The glasses are garnished with a lime zest and sugar mixture that looks so pretty! Although not necessary if youre short on time, it really does add that special wow factor!

Minty prosecco granita

  • Prosecco

    A sweet sparkling Italian white wine that makes this granita delicious! It pairs so perfectly with the freshness of lime and mint. The alcohol content also allows the granita to not set solid and creates the perfect slushy consistency.

  • Sugar & water

    Sugar and water are boiled together to create a sweet simple syrup base for thsi granita. The water is required to set the granita to a perfect consistency as using prosecco alone would melt too fast. Also sweetens the granita and makes it delicious!

  • Mint

    Mint is blitzed into this granita to gives you the perfect minty flavour in every mouthful.

  • Limes

    Fresh limes are squeezed into the granita to offset the sweetness and gives freshness. Can be substituted with fresh lemon juice however it will give the granita a different flavour profile - still delicious!

Garnish

  • Lime wedges

    Lime wedges are used as the ‘glue’ to stick the pretty sugar to the sides of these glasses. This is done by simply rubbing the fresh lime wedges on the glasses and then dipping them in the lime sugar mixture.

  • Lime zest & sugar

    Fresh lime zest is stirred through sugar to create the perfect zesty sweet garnish!

Ingredients

Garnish
  • 1 lime (zest)
  • 1/3 cup white sugar
  • 1 lime (cut into wedges)
Minty prosecco granita
  • 1 cup caster sugar
  • 1 cup water
  • 3 Tbsp mint leaves
  • 3 limes (juiced)
  • 1 bottle (375ml) prosecco

Instructions

Garnish
  1. Mix sugar and lime zest in a shallow bowl. Rub the side of a shot/coupe glass with a lime wedge. Gently dip the glass into the sugar mixture and set aside on a tray to set. Repeat with remaining glasses.
Minty prosecco granita
  1. Add the sugar and water to a medium sized saucepan. Bring to a gentle boil over medium heat, whisking constantly or until sugar is dissolved. Remove from heat and leave to cool for 1 hour.
  2. Add lime juice and mint leaves to a small blender. Pulse until mint is very finely chopped. Pour into a large freezer-safe tray/tin. Add prosecco and cooled sugar mixture to tray. Stir with a spoon until combined.
  3. Cover and place in the freezer for at least 6 hours until set (up to 3 months!).
  4. Using the end of a fork, gently shave the granita into the perfect slushy consistency. Divide between garnished glasses. Enjoy!
