Oh, so delicious! These fudgy blondies are packed full of white chocolate and macadamia chunks then sprinkled with sea salt. A super delicious one-bowl dessert or sneaky treat anytime of the day.

I like to let these blondies cool completely before cutting them to get nice straight edges. I then warm them slightly in the microwave before serving so the white chocolate is all gooey and oozy!

These blondies are best served warm alongside freshly whipped cream and strawberries. Feel free to serve with any other fresh berries you have on hand! The tartness of the berries compliments the rich blondie so well.

  • White chocolate

    I like to use a good quality block of roughly chopped white chocolate rather than chocolate drops/buttons. This ensures you get big chunks of chocolate as well as shavings which disperse more evenly into the mixture and give you more white chocolate flavour! The big chunks go all gooey and oozy when served warm. Feel free to substitute with white chocolate drops/buttons if this is all you have on hand.

  • Macadamias

    Macadamias are such a beautiful buttery tasting nut. They add great texture and a slight toasted, nutty flavour to the blondie. Feel free to leave out if serving to guests with a nut allergy.

  • Flour & cornflour

    Flour is used to give this blondie body. I like to add a little cornflour as it gives the slice a fudgier and more dense texture. Cornflour can be left out if you don’t have any on hand.

  • Butter

    Butter is used to bind the ingredients together and give the blondie a beautiful rich and buttery flavour. Cannot be substituted with other fats.

  • Caster sugar & brown sugar

    A combination of brown sugar and caster sugar is used to give these blondies the perfect richness. Brown sugar gives the slice a rich caramel flavour and colour. It also helps the texture to be fudgier than if using plain sugar. I like to use caster sugar as the granules dissolve easier than regular sugar and there is no grittiness to the texture. Caster sugar goes well with the brown sugar as it’s not so rich.

  • Eggs

    Eggs helps the blondie to rise slightly and maximise its fudgy texture.

  • Vanilla extract

    A little vanilla extract gives this blondie a beautiful hint of vanilla and caramel. Delicious! Be sure to use real vanilla extract, not the fake stuff.

  • Salt

    A touch of sea salt makes this blondie exceptional! It contrasts so well with the richness of the white chocolate and makes this slice truly addictive! Don’t be tempted to leave out!

  • 220g butter (melted)
  • 1 cup brown sugar
  • 3/4 cup caster sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 cups flour
  • 1 1/2 Tbsp cornflour

Serving suggestion

I like to serve these skewers topped with crushed toasted peanuts, coriander and fresh chili. Serve alongside coconut rice and a fresh cucumber salad to round out the meal.

Storing

Leftovers skewers and sauce will keep in an airtight container in the fridge for up to 3 days.
