A warming cinnamon toasted granola with flavours of the classic pecan pie! Served with your favourite milk and fresh banana this is a healthy and delicious way to start the day.

This recipe was created as I wanted a granola that was easy to make, healthy and yet a little indulgent! Something to serve to guests for a light breakfast option that feels like you’ve put in the effort.

It is also a lot more economical than storebought. I calculated the exact cost of this recipe (using real maple syrup & vanilla extract) and it comes in at $11.89 for 1.3kg of granola. When compared with Carmens brand of granola (regular granola brand in Australia) it costs $25.72 for the same quantity! Thats $.99 per serve compared to $2.14 per serve for storebought!

This recipe has a lot less sugar than storebought granola. I use maple syrup as a non-refined sweetener and a little brown sugar just to give that extra caramelisation. The brown sugar can easily be substituted for more maple syrup if desired.

I like to serve this granola with vanilla yoghurt, almond milk and freshly sliced banana. Of course, it goes well with any fresh fruit or yoghurt and is even great as a sneaky afternoon snack!

Bonus, it freezes perfectly in a sealed container or bag! Perfect for serving to guests or giving as a gift to a new mum or someone in need.

Wet ingredients

  • Almond butter

    Almond butter acts as the glue to bring the granola together and form delicious little crunchy clusters. I prefer almon butter as it has a sweeter and milder flavour that other nut butters and doesnt overpower the pecan flavour. Can be substituted with peanut or cashew butter if desired.

  • Butter

    Butter is used as the fat to also help bind the ingredients together and allow the oats to get uniformly toasted. It also has a lovely buttery flavour similar to that of pecan pie. Can be substituted with coconut oil to make the recipe dairy free.

  • Maple syrup

    Maple syrup is used as the main sweetener here. It has a lovely caramel flavour and lowers the refined sugar content in the recipe. Can be substituted with honey.

  • Brown sugar

    Brown sugar is used to give extra caramelisation and flavour similar to pecan pie. The brown sugar can easily be substituted for more maple syrup if desired.

  • Vanilla extract

    Vanilla extract gives the granola a beautiful vanilla flavour similar to that in a pecan pie. Please use real vanilla extract here.

Dry ingredients

  • Rolled oats

    Rolled oats make up the bulk of this recipe. They are delicious toasted, provide slow releasing energy and are very economical! Win-win all round.

  • Pecans

    Pecans are roughly chopped and provide delicious toasted nutty flavour similar to a pecan pie. Can be substituted with other nuts or seeds if desired.

  • Shredded coconut

    Shredded coconut isn’t traditionally in pecan pie however it gives this recipe delicious flavour and crunchy texture! Can be substituted with desiccated coconut for less texture.

  • Cinnamon

    Cinnamon provides the warmth and deliciousness to this recipe! Please don’t leave this out!

  • Salt

    A touch of salt goes a long way in making this recipe addictive! It helps to balance the sweetness and bring out the toasted flavour of the oats and nuts.

  • Currants

    Currants are not traditionally found in pecan pie however they provide the sweet chewiness like the original pie. I like the small chewy pops of sweetness however they can be substituted with raisins or sultanas.

Ingredients

Dry ingredients
  • 4 cups rolled oats (gf)
  • 1 cup pecans (roughly chopped)
  • 1/2 cup long thread coconut
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup currants
Wet ingredients
  • 3 Tbsp butter
  • 3 Tbsp almond butter
  • 1/3 cup maple syrup
  • 2 Tbsp brown sugar
  • 1 tsp vanilla essence

Instructions

Cinnamon pecan pie granola
  1. Preheat oven to 180 degrees Celsius. Line two baking trays with baking paper.
  2. In a large bowl, combine all the dry ingredients (excluding currants) with a spatula.
  3. Add all wet ingredients to a medium sized microwave safe bowl. Heat in microwave for 30 seconds then stir until combined with a spoon. If butter isn't fully melted, heat again for 15 seconds or until fully combined.
  4. Pour wet ingredients into large bowl with dry ingredients and mix well with a spatula.
  5. Tip mixture onto prepared trays and flatten down with the back of a spatula.
  6. Put trays in prepared oven for 8-10 minutes or until golden. Keep an eye on it as it tends to burn fast!
  7. Leave granola on trays until completely cool. Sprinkle over currants. Enjoy!

Notes

Serving suggestion

Serve with a generous spoonful of vanilla yoghurt and fresh strawberries.

Storing

Will keep in an airtight container in the pantry for up to a week. Can be frozen for up to 3 months in an airtight container.
