A light and refreshing summer starter that looks great when served to guests! Avocado and lime are smashed and topped with pan-fried prawns, cucumber, red onion & dill. Your next go-to loaded dip!

I like to serve this dip with toasted slices of Turkish bread and rice crackers. It goes so well with a glass of chilled white wine on a long hot summers evening.

Garlic prawns

  • Prawns

    I like to use raw WA prawns with tails removed for this recipe. WA prawns are so big and juicy however feel free to use local prawns to you. Do not use precooked prawns as they are generally overcooked and rubbery. Tails off also make the dipping process more streamlined.

  • Butter

    Butter is used as the fat to cook the prawns and gives these prawns a lovely buttery flavour. Can be substituted with extra virgin olive oil if desired.

  • Garlic

    Freshly minced garlic gives these prawns a flavour boost and makes them delicious! Please don’t use the stuff out of the jar as it will overpower the delicate prawn flesh.

  • Salt

    Salt helps to bring out the flavours of the garlic and prawns. Don’t leave it out!

Smashed avocado dip

  • Avocado

    Avocados make up the bulk of this dip and have a wonderful creamy texture. I like to leave the avocado with a few chunks in it when mashing it so you can enjoy a variety of textures throughout the dip and raw avocado flavour.

  • Cucumber

    Cucumber is peeled and rolled into ribbons in this recipe. This not only looks great but also creates little rolls of cucumber that are easy to scoop up onto bread.

  • Feta

    Feta is crumbled over the top of this dip and mashed throughout the avocado. It provides a creamy texture and sharpness of flavour that compliments the avocado so well. I prefer to use Danish style feta over Greek style feta as it is creamier in texture.

  • Red onion

    Red onion is diced finely to give pop of tartness and contrast with the mild creamy textures and flavours in this recipe. Can be substituted with shallots.

  • Lime juice & zest

    Lime juice is used to thin down the avocado and stop it from browning so quickly - perfect if making ahead for visitors. Lime zest is to really give the dip its punchy lime flavour. Can be substituted with fresh lemon juice and zest if desired.

  • Garlic

    Fresh garlic gives the dip a flavour boost and compliments the cooked garlic on the prawns. Please use fresh garlic.

  • Salt & pepper

    Salt and pepper add the finishing touch to this recipe and really bring out the beautiful fresh avocado flavour.

  • 1 Tbsp butter

  • 2 avocados
  • Zest of 1 lime
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 1/2 Tbsp lime juice (approx 1 lime)
  • 1/2 cucumber (peeled into ribbons)

Serving suggestion

I like to serve this dip with lightly toasted bread & rice crackers. Also great loaded into baby cos lettuce cups.

Storing

Leftover dip will keep for 1 day covered in the fridge. Not suitable for freezing.
